The Importance of Sourdough
Have you ever heard people say they can’t eat gluten,
but feel completely fine with sourdough bread?
There’s science behind that. True sourdough is made through a slow, natural fermentation process, where wild yeasts and lactic acid bacteria work together to pre-digest the flour.
During this time, complex carbohydrates and proteins (including gluten) are partially broken down, making the bread easier to digest and gentler on the gut. The lactic acid bacteria also produce beneficial compounds, like short-chain fatty acids and bioavailable minerals that support digestion, immunity, and even blood sugar balance.
Unlike commercial bread made with added yeast and fast-rising methods, sourdough takes time (often 24 hours or more) to fully develop. This slow fermentation not only enhances flavour and texture but also unlocks nutrients that are otherwise difficult to absorb, such as iron, zinc, and magnesium.
The result is real bread: naturally leavened, deeply nourishing, and alive with beneficial microorganisms. When baked properly, sourdough offers more than sustenance, it’s a living food that harmonizes traditional wisdom with modern nutritional understanding.

Our blends highlight the integrity of simple ingredients: soft all-purpose flour for lightness and rise, sprouted grains for nourishment and depth, including sprouted spelt, sprouted whole wheat, and sprouted buckwheat. These ancient grains. are honoured for their earthy, grounding flavours. Nothing refined, just pure grain transformed slowly through natural fermentation.
Each flour we use is chosen with intention, not only for its texture and taste but for how it supports well-being. Sprouted flours are rich in nutrients and easier to digest, bringing a wholesome vitality to our loaves. The result is bread that feels as good as it tastes - balanced, nourishing, and deeply connected to the earth.
